Our neighbors are talented: discover the Ferme de Bourse!

Ten minutes from La Lipomerie, in the heart of Ferrières-la-Verrerie, lies a unique place: La Ferme de Bourse, the estate of Pascal Turpin and Stephan Burkle. Their story is one of a daring career change, a complete turnaround after professional careers far removed from the world of agriculture.
In 2019, their encounter with the Association for the Defense of the Bretonne Pie Noire breed was a revelation: they decided to become dairy farmers, and this breed of cattle, emblematic of small family farms, became the cornerstone of their project.
A passionate commitment
Pascal and Stephan's approach focuses on saving the Bretonne Pie Noire, a breed that has come close to extinction: from 700,000 head in France in 1900, there were only 300 left in 1980! Thanks to the efforts of its defenders, and with the support of INRA, its herd now numbers 2,500 females. This is truly a matter of preserving a national heritage.
The Bretonne Pie Noire has unique characteristics: it is particularly hardy and has been little altered by modern crossbreeding. Its milk, which is exceptionally rich in enzymes, is ideal for making the famous gwell breton (“big milk”), a type of fermented milk prized by connoisseurs. Pascal and Stephan also make delicious organic yogurts, constantly refining their flavors with aromatic herbs from their garden such as rosemary, verbena, and elderflower.
In tune with nature
At Ferme de la Bourse, farmers and their small herd of around thirty cows live in harmony with nature, far removed from intensive farming practices. Pascal and Stephan's motto? "Cows give what they can," and calves take priority over their mothers' milk.
Milking generally takes place every other day, rather than twice a day as is the case on most farms. This approach yields around 40 liters per day, which is perfect for the farm's artisanal production. Dairy products: yogurt, cheese, rice pudding, teurgoule, faisselles... And meat on occasion. A respectful relationship with the animals, free from constraints, and limited production that remains local.
La Ferme de Bourse embodies a viable alternative to conventional agriculture, proving that moderate farming, controlled investment, and short supply chains can ensure a fulfilling and economically sound life for farmers. It is a powerful symbol of respectful and sustainable agriculture, right on our doorstep.
